The only naturally fermented ( col fondo) Prosecco I have ever tasted and once you taste it you can’t go back. The grapes come from the vineyard which sits at an altitude of 450ml on clay and limestone soils. The average vine age is between 40-50 years of age and the fruit is hand picked.
The wine is naturally fermented and is not disgorged hence the lees sitting at the bottom of the bottle. Magic! This is a bone dry Prosecco with a beautiful delicate fizz, incredibly pure orchard fruits and a long chalky finish. The wine is has a crown seal and the best way to serve this great wine is evenly distribute the lees creating a cloudy appearance.
